What Makes Our Olive Oil Ultra Premium?

What Makes Our Olive Oil Ultra Premium?

Walk into any supermarket in the world and you will find a shelf of bottles labelled "Extra Virgin Olive Oil." What you will rarely find is an explanation of what separates a supermarket product from a truly ultra premium oil. Let us explain.

True extra virgin olive oil begins with acidity. The legal maximum for any EVOO is 0.8%. Our oil comes in below 0.3% — a number achieved only through perfect fruit selection, immediate cold pressing, and the natural advantage of Mani's terroir.

But acidity is just the beginning. Ultra premium EVOO is defined by its polyphenol content — the natural antioxidants found in olive oil that deliver its remarkable health benefits. Oleocanthal, the primary polyphenol in our oil, has been widely studied for its powerful anti-inflammatory effects, described by researchers as a natural analogue of ibuprofen.

And then there is the taste. An ultra premium oil does not simply dress a salad. It transforms it. It finishes a dish. It speaks of place, of season, of the people who made it. Our oil tastes of Mani: wild, proud, alive.
